Carol May Davis Eckes, 85 years old of Sparrowbush, NY passed away at her home with her family by her side.

The daughter of the late Lester Davis and Marjorie Farrara Davis, she was born on May 2, 1940 in Sparrowbush, NY.

Carol was owner and proprietor of Lennys Place Ice Cream stand for many years. Carol was known for her endless volunteering for what ever need the community had. Just to name a few, she served as Councilwoman, Television Station Channel 8, Meals on Wheels, Republican Committee, Port Jervis Ambulance Squad and of course her passion, Creating the Seventh Day Adventist Food Pantry and providing food to those in need through out the Tri State area, where she provided this necessary service for 11 years. If someone needed anything, big or small…Carol would do all she could to help, going above and beyond.

Loving wife of 65 years of Wilbur Eckes who married On December 4, 1960. Mother of Wilbur Eckes Jr. who predeceased her, Lennie Schiefer (Mark) of Newport Richie, FL, and David Eckes (Mischelle) of Sparrowbush, NY. Grandmother of Sarah Simpson (Joe Palmer) of Chattanooga, TN, Megan Heckman of Sparrowbush, NY, Daniel Schiefer (Mikaila) of Florida, Mikaylee Eckes of Sparrowbush, NY. Great grandmother of Parker and Mason Palmer. Sister of Lester Davis Jr, who predeceased her, Daisy Davis and Thelma Davis, both of Florida.

We would like to Thank the Hospice of Orange and Sullivan Counties for their caring comfort and skill during Carols final months. The family would like to express special Thanks to Jackie, Patrice and all of the Hospice team involved in her care. Also, special Thanks to Vicky, her home care aide, who treated us all as family and gave Carol superior care. 

In keeping with the family’s wishes, funeral services will be private and by invitation only. Family, friends or acquaintances who have not received a personal invitation are kindly asked to respect their desire for privacy at this difficult time.

Committal will take place in the family plot at Quarry Hill Cemetery, Rio.
